Fermenting and Preserving Course

Want to reduce food waste and improve your health?

Join our Fermenting and Preserving course and:

  • Learn about gut health
  • Discover the health benefits of fermented foods
  • Make your own fermented food & drink (Kombucha, Kefir, Kimchi, Sauerkraut)
  • Learn how to keep food for longer by preserving & dehydrating

The six-week course will run every Tuesday 10-11.45am from September 16th-October 21st 2025. Learners are expected to commit to all six sessions.

This course is free thanks to a grant from the Co-op Local Community Fund. However you will require some equipment and ingredients to make the food and drinks which you can take home. You can either bring these yourself, or purchase them from the teacher. You will not need to bring anything on the first week.

Week 1:

Introduction to fermenting. Explanation of benefits and methods.

Week 2:

 Learning how to make fermented non alcoholic fizzy drinks: kombucha, water kefir, ginger beer. Recipes and demonstration on how to make one of them.

Week 3:

 Fermented vegetable drinks: beetroot kvass, fermented cucumbers

Week 4:

Fermenting  vegetables and mushrooms:

Sauerkraut, kimchi, salted mushrooms with onions

Week 5:

Dehydrating fruits and vegetables and other methods of preserving food.

Making fruit leathers, fruit sugar, veg mix for soups and sauces

Week 6:

To be confirmed depending on learners’ choice
